Recap: Lake House Lunch with Alla Wolf-Tasker
As part of their icon series in May, delicious hosted a picturesque lunch at the award-winning Lake House restaurant in Daylesford, Victoria, the region best known for its exceptional wine, fine food, and hospitality.
The lunch was held in celebration of head chef and co-owner Alla Wolf-Tasker and her latest book, “Three Decades-On Lake House and Daylesford.” The dishes in the four-course lunch were selected from seasonal ingredients and reflected the deep connection between the region and the acclaimed Lake House restaurant which has become a cornerstone of Australian cuisine over the last 30 years. The wines for each course were matched the day of by The Wine Society.
The first course featured free-range-farm British White beef tartare, radish, confit yolk, quail egg with herb, Tabasco and Worcestershire dressing. The second course was Holy Goat fresh curd custard, tempura brassicas, shoots and flowers, sweet mustard dressing. The third was a delectable Milking Yard Farm Sommerlad chicken ballotine, salsa verde, black barley, jus gras. And for dessert, The Apple Sphere – buttermilk mousse, caramelised apple, candied walnut, white chocolate.
Upcoming: Dinner at Harvest Newrybar
On Tuesday August 21st, delicious’ own Chef and Butcher collaborate with wild food researcher Peter Hardwick and Harvest head chef Alastair Waddell for a dinner that celebrates the fruits of the Byron region in a foraging-themed dinner.
The dinner will be served family-style with shared woodfired Ballina prawns, charred kelp, coastal succulents, grilled local fish and garden greens sauce, served with Logan Wines Cuvee ‘M’ sparkling. Next is woodfired Byron Bay suckling pig, barbecued whole Bexhill lamb, Harvest house pickles, mantra relish, piccalilli roast pumpkin, sheep’s yoghurt, baked potatoes and mother of herb butter, accompanied by Logan ‘Weemala’ pinot gris or pinot noir. Woodfired local fruits with Allard Dairy cheese sorbet and Logan moscato finishes off the feast.
